Grapes are harvested by hand into small 10kg boxes. Manual selection takes place before grapes are chilled on a bed of dry ice in a chamber to prevent oxidation. Cold maceration at 12° in an anaerobic atmosphere over a period of 10 hours. After pressing, clearing takes place in special tanks before fermentation at 17°. Alcohol Content:13% |
